Then I started beating the eggs, on medium-high speed, until they started to get a bit glossy. I added the confectioners’ sugar, a little bit at a time, then added the vinegar. Continued to beat until the whites were stiff, which takes a good long while, 10 minutes or so. The picture above shows how stiff the meringue was when I stopped. I filled my ziptop bag with the meringue and sealed the bag.
